Super Healthy Fruit Pancakes
This pancake recipe is so delicious and very easy to make. Packed with fruit, they’re a super nutritious way to start your day. Or maybe an afternoon snack?
I like mine with a cup of green tea, to up my antioxidant intake. But a cup of freshly roasted coffee works just as well. This recipe makes 8 x 5 inch pancakes.
- 1 cup whole-wheat flour
- 1/2 cup rolled oats
- 1/4 cup sliced almonds or crushed pecans
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 2 medium bananas
- 1 cup almond milk
- 1 egg
- 1 teaspoon almond extract
- 1 cup mixed berries
- Vegetable oil
In a large bowl, combine the first 5 dry ingredients.
In another bowl, mash the bananas and then add the milk, egg and almond extract. Mixing together well.
Pour the banana/milk ingredients into the dry ingredients and stir until smooth.
Add the berries and fold them into the batter mix.
Warm a skillet over medium heat and coat with a little vegetable oil.
Pour a ladle of batter mix into the pan and cook each side 2-3 minutes until golden.
Repeat until you have used all the batter.
